Drew's Favorite Black Bean Salad

From the Thrill of the Grill Cookbook
Serves 6 - 8

2 can’s black beans (rinsed)
2/3 cup chopped red onion
½ cup chopped red bell pepper
2 Tablespoons chopped parsley
2 tablespoons chopped cilantro
2 tablespoons chopped scallions
1 tablespoon ground cumin
¼ teaspoon cayenne pepper
4 tablespoons olive oil
10 tablespoons lime juice (about 5 limes)
Salt & freshly cracked black pepper to taste

Rinse black beans in cold water set aside.
In large bowl add chop red onion, red pepper, parley, cilantro & scallions.
In small bowl combine cumin, cayenne pepper, olive oil and lime juice.
Add black beans to large bowl w/ onion & pepper mix.
Pour olive oil/ lime juice dressing over beans & peppers mix.
Toss lightly until everything is mixed together. Be careful with mixing the black beans so they don’t become mushy.
